Enjoyed raw sheep's milk and cheeses as well as other cultured and naturally preserved foods in the land of plenty during my recent trip to the Alps.  As a member of the Weston A Price foundation, I promote breads that are soaked, sprouted or fermented in order for the body to assimilate the nutrients contained in the whole kernel.  Phytic acid, an anti-nutrient found in breads and legumes, can block essential minerals from absorption when using modern baking methods such as quick rising breads, causing adverse health consequences.  The gluten-free movement has resulted from losing touch with our ancestral heritage of food preparation.
